Veggie Breakfast Frittata
INGREDIENTS
6-8 EGGS (ENOUGH TO COVER VEGGIES)
1/4 CUP MILK, CREAM, OR NON-DAIRY MILK
VEGGIES OF YOUR CHOICE (WE USED ASPARAGUS, SPRING ONIONS, RAINBOW CHARD, AND RAMPS)
SALT + PEPPER TO SEASON
INSTRUCTIONS
PRE HEAT OVEN 400 DEGREES
WHISK THE EGGS WITH MILK + SEASONINGS
IN A CAST IRON, SAUTEE VEGGIES USED FOR FRITTATA
ONCE VEGGIES ARE COOKED, ADD EGG MIX TO CAST IRON
LET THE EGGS START TO SLIGHTY SET (DON’T STIR!)
TRASNFER CAST IRON INTO OVEN AND BAKE FOR 15 MINUTES OR UNTIL THE EGGS ARE FULLY SET (THEY WILL START TO PULL AWAY FROM THE SIDES OF THE SKILLET)
LET COOL AND ENJOY!
